Oh how do I love olives. My kids love them, my husband loves them,and my grandchildren love them. Who couldn’t love them? Don’t answer that!
I’ve been busy writing menus for my upcoming cooking classes and one thing I notice in a lot of the recipes is the use of olives and/or olive oil. I don’t think I can ever cook without olive oil and almost all my salads require olives of some type. In the directions for an anti-pasti platter, I list not only adding several types of olives but to also drizzle the platter of meats and cheeses with a little olive oil for an added touch.
Ever since I watched David Rocco put a drizzle of olive oil on a plate of fresh pasta with marinara sauce we have done the same. The added olive oil adds that wow factor like a few shavings of fresh Parmesan cheese. I love the various types of olive oil that is available on the market. I have a local shop near me that sells nothing else but olive oil and balsamic vinegar. I’ve gone into this shop in the past for what I affectionately call “oil shots”.
